In a mixing bowl, combine the step 1 ingredients mix well and evenly coat the chicken with the mixture.
Let the chicken marinate for at least 30 minutes or up to overnight if possible.
STEP: 2 (Cooking Rice and Chicken)
In a pot add the olive oil, bay leaves, oregano, long grain rice, red onion, mixed vegetables, flat leaf parsley, and water stir everything together lightly.
Add the chicken to the top of the rice and cook in a one pot with rice settings for 15 minutes.
