Creamy Lemon Zucchini Pasta with Shrimp

Ingredients
  

STEP: 1 (Marinate Chicken)

  • 1 tbsp. Olive Oil
  • 1 Bay Leaves
  • 2 Cups Shrimp peeled, deveined, washed
  • 4 Cloves Garlic diced
  • 1 tbsp. Ginger minced
  • 1 Cup Red Onion
  • 1 tbsp. Green Chilies deseeded, diced
  • 1 Cup Natural Yogurt
  • 1/2 tsp Paprika minced
  • 1/8 tsp Ground Nutmeg diced
  • 1 tsp Raw Honey
  • 1/2 tsp Ground Black Pepper medium diced
  • 1 tsp Himalayan Pink Salt
  • 1 Cup Cherry Tomato halved
  • 2 lb. Zucchini medium, spiralized
  • 2 tbsp. Parmesan Cheese
  • 1 tbsp. Extra Virgin Olive Oil
  • 1 tbsp. Flat Leaf Parsley diced

Instructions
 

  • In a pot over medium heat, sauté olive oil, bay leaves, shrimp, garlic, ginger, and red onion for 3 minutes.
  • Add green chilies, natural yogurt, paprika, ground nutmeg, raw honey, black pepper, salt and cherry tomatoes. Continue to sauté all of the ingredients for another 2 minutes over medium high heat.
  • Add spiralized zucchini and Parmesan cheese. Continue to sauté for a minute over medium high heat.
  • Serve immediately on a plate with the choice of sauce and garnish with extra virgin olive oil and diced flat leaf parsley.
